Pisco

Pisco is the name of a liquor made from whole grapes in Peru. It is generally considered a variety of brandy, but is closer to a Peruvian grappa instead.

The recipes below are prepared with pisco.


Algarrobina cocktail

4 or 5 cubes of ice
1 oz. pisco
1/2 oz. brown cacao cream
1/2 oz. algarrobina (carob) syrup
1/4 oz. sugar syrup
2 oz. evaporated milk
1 egg yolk

To make an algarrobina cocktail, mix all the ingredients in a shaker and then serve them, without ice, in a sours glass. Garnish with grated nutmeg over the drink.


Canary

4 or 5 cubes of ice
2 oz. pisco
fill with orange juice

The canary is a direct drink, so make it pouring all the ingredients in a long-drink glass and adding a stirrer to garnish.


Captain

4 or 5 cubes of ice
1 1/2 oz. pisco
1 1/2 oz. red vermouth

The captain is an old drink. It is a classic for older gentlemen. To prepare one, stir the ingredients in a separate glass and serve, without ice, in a Martini glass. Add a maraschino cherry to garnish.


Chilcano de pisco

4 or 5 cubes of ice
dash lemon juice
dash angostura bitters
2 oz. pisco
1/2 oz. sugar syrup
fill with ginger ale

A chilcano de pisco may not be very popular, but it's still delicious. To make it, pour all the above-mentioned ingredients in a highball glass; and then garnish with a slice of lemon and a stirrer.


Llanganuco

4 or 5 cubes of ice
1 1/2 oz. pisco
1/2 oz. curaƧao blue
3/4 oz. dry vermouth

The Llanganuco cocktail is named after one of the most beautiful lakes in the Peruvian Andes mountains. To make it, you need to mix all the ingredients in a shaker and then serve, without ice, in a sours glass. The drink is usually garnished with a green cherry.


Machu Picchu

4 or 5 cubes of ice
2 oz. pisco
1 oz. green mint liquor
1/2 oz. grenadine syrup
fill with orange juice

Long before being a Wonder of the World, Machu Picchu had its own drink. To make one, you pour all the aforementioned ingredients in a sours glass; and garnish with red and green cherries, straws and mint leaves.


Peru libre

4 or 5 cubes of ice
dash of lemon juice
1 oz. pisco
1 oz. sour cherry liquor
fill with cola

Peru libre means free Peru. It is inspired in the Cuba libre cocktail. To make one, pour all the ingredients in a highball glass and include a stirrer as garnish.


Piscina / Swimming pool

4 or 5 cubes of ice
1 oz. whisky
1 oz. rum
1 oz. pisco
1 oz. vodka
1 oz. gin
3 oz. orange juice
2 oz. pineapple juice
1/2 oz. grenadine syrup

Piscina is the Spanish word for swimming pool, and the name of this cocktail. To make a glass, pour all the ingredients in a brandy glass and garnish with a piece of pineapple, a cherry and straws.


Pisco crusta

4 or 5 cubes of ice
4 or 5 drops of angostura bitters
1/4 oz. lemon juice
1/2 oz. grenadine syrup
1/4 oz. maraschino liquor
2 oz. pisco

The crusta family of cocktails is worldwide famous. Pisco has its crusta cocktail too. To make one, mix all the ingredients in a shaker for ten seconds and then pour without ice in a cocktail glass, crowned with sugar. Garnish with a lemon twist.


Pisco fix

crushed ice
2 tb. of icing sugar
1/4 oz. lemon juice
1 oz. peachtree liquor
1 1/2 oz. pisco
fill with water

A pisco fix may not very popular, but this doesn't make it less tasty. To make one, pour all the ingredients in a long-drink glass, and then garnish with a slice of lemon and a maraschino cherry.


Peruvian pisco sour

4 or 5 cubes of ice
1/2 oz. lemon juice
1 oz. sugar syrup
2 oz. pisco
1/2 oz. egg white

The pisco sour is considered a national cocktail both in Chile and Peru, but the recipe is not the same. To make the Peruvian variety, mix all the ingredients in a shaker and serve, without ice, in a sours glass. Next, garnish with two drops (and only two) of angostura bitters.


Sun and shadow

4 or 5 cubes of ice
dash of lemon juice
dash of angostura bitters
1 oz. pisco
1 1/2 oz. sour cherry liquor
fill with ginger ale

A sol y sombra (sun and shadow, in English) is a tasty cocktail named that way because it has one coloured liquor (sour cherry) and one transparent one (pisco). To make one, pour all the ingredients in a highball glass, and next garnish with a slice of lemon and a stirrer.
